While dates are not native to Kashmir, the prized Mazafati variety — known as the 'king of dates' — is widely traded and beloved in Kashmiri households, where they are a staple of Eid celebrations, Kahwa (traditional green tea), and daily Ramadan iftars. Mazafati dates from Bam, Iran, are distinguished by their dark colour, soft flesh, and caramel-like sweetness. Each 100g contains more potassium than a banana, over 6g of fiber, and a natural glycaemic index far lower than refined sugar — making them the ideal natural sweetener.
